Ingredients

  • 2 fillets salmon
  • 1 cup cooked jasmine rice
  • 2 tablespoons honey
  • 2 tablespoons soy sauce (low sodium)
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ginger, grated
  • 1 green onion sliced (for garnish)
  • 1 tablespoon sesame seeds (for garnish)
  • 1 cup steamed broccoli (or any vegetable of choice)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together honey, soy sauce, minced garlic, grated ginger, and olive oil to create the marinade.
  3. Season the salmon fillets with salt and pepper on both sides, then place them on the prepared baking sheet.
  4. Pour half of the honey garlic marinade over the salmon fillets, ensuring they are well coated.
  5. Bake the salmon in the preheated oven for about 12-15 minutes, or until the fish flakes easily with a fork.
  6. While the salmon is baking, prepare your rice bowls. In a serving bowl, start with a base of cooked jasmine rice.
  7. Once the salmon is ready, remove it from the oven and brush the remaining marinade over the top.
  8. Top the rice with the baked salmon and add steamed broccoli (or your choice of vegetable) alongside.
  9. Garnish the bowl with sliced green onions and sesame seeds for added flavor and texture.
  10. Serve warm and enjoy your delicious honey garlic salmon rice bowl!
