Ingredients

  • 4 pieces bone-in, skin-on chicken thighs
  • 0.25 cup Dijon mustard
  • 0.25 cup honey
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh rosemary, chopped
  • 0.5 teaspoon dried rosemary
  • 1 teaspoon smoked paprika
  • to taste salt
  • to taste pepper
  • for garnish fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together the Dijon mustard, honey, olive oil, minced garlic, rosemary, smoked paprika, salt, and pepper until well combined.
  3. Place the chicken thighs in a large resealable bag or a bowl and pour the marinade over the chicken. Make sure each piece is well coated. Seal the bag or cover the bowl and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
  4. After marination, place the chicken thighs skin side up in a baking dish. Pour any remaining marinade over the chicken.
  5. Bake the chicken in the preheated oven for about 35-40 minutes, or until the skin is crispy and the internal temperature reaches 165°F (75°C).
  6. Once cooked, remove the chicken from the oven and let it rest for about 5 minutes before serving.
  7. Garnish with chopped fresh parsley.

💡 Chef's Notes

For best flavor, marinate the chicken for up to 2 hours.
