BBQ Ranch Chicken Quesadillas

Instructions
In a mixing bowl, combine the shredded chicken, BBQ sauce, and ranch dressing. Stir until the chicken is well coated with the sauces.
Heat a non-stick skillet over medium heat and add a drizzle of olive oil.
Lay a tortilla in the skillet, and sprinkle half of the cheddar and mozzarella cheese across half of the tortilla.
Spread a quarter of the BBQ ranch chicken mixture over the cheese, followed by a sprinkle of sweet corn and some red onions.
Fold the tortilla over to cover the filling, and cook for about 3-4 minutes until the bottom is golden brown.
Carefully flip the quesadilla and cook for another 3-4 minutes until the other side is golden and the cheese has melted.
Remove from the skillet and let it cool for a minute before slicing into wedges.
Repeat the process with the remaining tortillas and filling.
Notes
Serve with extra BBQ sauce and ranch dressing for dipping.
