1medium headcauliflower, cut into bite-sized florets
1cupall-purpose flour
1teaspoongarlic powder
1teaspoononion powder
1teaspoonsmoked paprika
1cupwater
1teaspoonsalt
1cupbuffalo sauce (store-bought or homemade)
2tablespoonsbutter, melted
to tasteFresh celery sticks, for serving
to tasteBlue cheese or ranch dressing, for dipping
Instructions
Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, salt, and water until smooth, creating a batter.
Dip each cauliflower floret into the batter, ensuring it is well coated, and then place them on the prepared baking sheet. Arrange them in a single layer with space between each floret.
Bake the coated cauliflower for 20 minutes, or until they are golden and slightly crispy.
While the cauliflower is baking, mix the buffalo sauce with the melted butter in a bowl until well combined.
After 20 minutes of baking, remove the cauliflower from the oven and drizzle the buffalo sauce mixture over the hot florets. Toss gently to evenly coat.
Return the buffalo-coated cauliflower to the oven and bake for an additional 10 minutes to allow the sauce to seep in and caramelize slightly.
Once done, remove from the oven and let cool slightly before serving.
Notes
Serve hot with fresh celery sticks and your choice of blue cheese or ranch dressing for dipping.
