In a large mixing bowl, combine the rolled oats, almond flour, shredded carrots, chopped nuts, and shredded coconut. Mix well.
In a separate bowl, whisk together the maple syrup, nut butter, ground cinnamon, vanilla extract, and salt until smooth.
Pour the wet ingredients into the dry mixture and stir until all ingredients are well combined. If desired, fold in raisins or chocolate chips for added sweetness.
Use your hands to form the mixture into small bite-sized balls, about 1 inch in diameter.
Place the energy bites on a parchment-lined baking sheet or plate.
Refrigerate for at least 30 minutes to help them firm up.
