Instructions
Preheat your oven to 425°F (220°C).
In a large mixing bowl, toss cauliflower florets with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
Spread the cauliflower in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for about 20-25 minutes, or until the edges are golden and crispy.
Once the cauliflower is roasted, remove it from the oven and sprinkle the shredded cheese evenly over the top.
Add the black beans, diced tomato, and jalapeño slices evenly across the cheese-covered cauliflower. Return to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.
Remove from the oven and allow to cool for a minute. Garnish with chopped cilantro and diced avocado.
Serve warm, with sour cream or Greek yogurt on the side for drizzling if desired.
