Instructions
In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, and salt until well combined.
In a separate bowl, mix the mashed banana, buttermilk, egg, vanilla extract, and melted butter. Stir until just combined.
Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix; a few lumps are okay.

Preheat a non-stick skillet or griddle over medium heat and lightly grease it with butter or coconut oil.
Using a tablespoon, drop small portions of batter onto the skillet, forming bites about 1-2 inches in size. Cook for about 2-3 minutes or until bubbles begin to form on the surface.
Flip the pancake bites and cook for another 2-3 minutes until golden brown. Continue the process until all the batter is cooked.
