In a mixing bowl, combine warm water, 2 tablespoons of sugar, and yeast. Allow it to sit for about 5-10 minutes until frothy.
In a large bowl or mixer, combine the flour and 1 teaspoon of salt. Gradually add the yeast mixture and mix until a dough forms.
Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Place it in a greased bowl, cover with a damp cloth, and let it rise for about 1 hour or until doubled in size.
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a large pot, bring 8 cups of water and ½ cup of baking soda to a boil. This will create the steaming bath for the pretzel bites.
Once the dough has risen, punch it down and turn it out onto a lightly floured surface. Roll it into a long rope, about 1-inch thick, and cut it into 1-inch pieces.
Carefully drop about 6-8 pieces of the dough into the boiling water for 30 seconds, then remove them with a slotted spoon and place them on the prepared baking sheet.
In a separate bowl, mix the ½ cup granulated sugar, ground cinnamon, and a pinch of salt for the coating.
Brush the boiled pretzel bites with melted butter and generously sprinkle the cinnamon-sugar mixture over them.
Bake in the preheated oven for 12-15 minutes or until golden brown.
Once out of the oven, let them cool slightly before serving.
