Instructions
In a blender, combine the diced mangoes, coconut milk, honey (or agave syrup), lime juice, vanilla extract, and a pinch of salt.
Blend the mixture until smooth and creamy, ensuring there are no mango chunks left.
Taste the mixture and adjust the sweetness if desired by adding more honey or agave syrup, then blend again.
Pour the mango-coconut mixture into popsicle molds, leaving a little space at the top for expansion.
Insert popsicle sticks into the molds and carefully place them in the freezer.
Freeze for at least 6 hours or until completely solid.
To remove the popsicles, run warm water over the outside of the molds for a few seconds until they loosen. Gently pull them out.
If desired, roll the popsicles in toasted coconut flakes for an extra crunch and flavor before serving.
Notes
Serve on a wooden board or in colorful cups, garnished with fresh mint leaves.
