Instructions
Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
Stir in the minced garlic and cook for an additional minute, being careful not to let it burn.
Add the orzo pasta to the skillet, stirring well to coat the grains with the oil and onion mix.
Pour in the vegetable broth, bringing it to a gentle simmer. Cook for about 8-10 minutes, or until the orzo is al dente, stirring occasionally.
Reduce heat to low, and slowly stir in the heavy cream until fully incorporated.
Fold in the chopped spinach and cook until wilted, about 2-3 minutes.
Stir in the grated Parmesan cheese and season with salt, pepper, and nutmeg (if using) according to your taste preferences.
Cook for another 2 minutes, allowing the sauce to thicken slightly.
Remove from heat and let it sit for a minute before serving.
Notes
Serve in shallow bowls, garnished with additional Parmesan cheese and cracked pepper.
