Instructions
In a bowl, combine the diced apples with 1 tablespoon of sugar and set aside to macerate for about 10 minutes.
In a separate mixing bowl, whisk together the flour, remaining granulated sugar, baking powder, cinnamon, nutmeg, and salt. In another bowl, mix the milk, egg, and vanilla extract until well combined.
Slowly add the wet ingredients to the dry ingredients, stirring gently until just combined. Fold in the macerated apples.
In a deep frying pan or pot, heat about 2 inches of oil over medium heat until it reaches 350°F (175°C).
Using a tablespoon or small cookie scoop, drop spoonfuls of the batter into the hot oil. Fry in batches for 2-3 minutes on each side or until golden brown.
Remove the fritter bites from the oil and place them on a plate lined with paper towels to drain excess oil.
While still warm, dust the apple fritter bites with powdered sugar.
