Instructions
Preheat your oven to 325°F (163°C). If using a silicone mold, place it in a muffin tin for stability.
In a blender, combine the eggs, cottage cheese, cheddar cheese, garlic powder, salt, and pepper. Blend until smooth and well combined.
In a mixing bowl, add the diced bell peppers and chopped green onions. Stir to combine the veggies.
Pour the egg mixture from the blender into the bowl with the veggies. Mix gently until the vegetables are evenly distributed throughout the egg mixture.
Lightly spray the silicone molds or muffin tin with cooking spray to ensure easy removal. Pour the egg mixture into each mold, filling them about 3/4 full.
Carefully place the muffin tin or molds into the preheated oven. Bake for 25-30 minutes, or until the egg bites are set and slightly golden on the edges.
Once baked, remove from the oven and let cool for a few minutes. Gently run a knife around the edges and pop out the egg bites from the molds.
Enjoy warm as a breakfast treat, or let them cool completely to store in the fridge for a quick meal later.
Notes
Serve on a colorful platter and garnish with fresh herbs. Optional: Pair with sliced avocado or fresh fruit.
