black beans, drained and rinsed

diced tomatoes with green chilies

corn kernels (fresh, frozen, or canned)

Instructions
Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain any excess fat if needed.
Stir in the taco seasoning, diced tomatoes (with juices), black beans, corn, salt, and pepper. Cook for an additional 5 minutes until heated through.
In a large baking dish, layer half of the crushed tortilla chips on the bottom.
Spread half of the meat mixture over the chips, then add half of the shredded cheddar cheese.
Repeat the layers with the remaining tortilla chips, meat mixture, and top with the remaining cheese.
Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
Remove the casserole from the oven and let it cool for a few minutes before serving.
Serve each portion with a dollop of sour cream on top and sprinkle with chopped green onions and cilantro if desired.
Notes
Use Greek yogurt as a healthier alternative to sour cream.
