In a large skillet, cook the ground turkey over medium heat until browned and cooked through, about 5-7 minutes. Drain any excess fat.
Stir in the taco seasoning, followed by the black beans, corn, diced tomatoes with chilies, and cooked quinoa or rice. Mix well and cook for an additional 3-4 minutes until heated through.
In a greased 9x13-inch baking dish, spread half of the turkey mixture evenly across the bottom.
Pour half of the salsa over the turkey layer, then sprinkle half of the shredded cheddar cheese on top.
Repeat to create a second layer with the remaining turkey mixture, salsa, and top with the rest of the cheese.
Bake in the preheated oven for about 25 minutes, or until the cheese is bubbling and golden.
Once done, remove from the oven and let it sit for 5 minutes. Top with chopped green onions, a dollop of sour cream, and crushed tortilla chips for extra crunch.
Garnish with fresh cilantro before serving.
