green or brown lentils, rinsed

Instructions
In a large pot, heat the olive oil over medium heat.
Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened.
Stir in the minced garlic and cook for another minute until fragrant.
Add the rinsed lentils, diced tomatoes (with their juice), vegetable broth, ground cumin, dried thyme, and bay leaf to the pot.
Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer for about 30-35 minutes, or until the lentils are tender.
Remove and discard the bay leaf. Use an immersion blender to purée some of the soup for a creamier texture, if desired.
Season with salt and pepper to taste.
Serve hot, garnished with fresh chopped parsley.
