Instructions
Hard Boil the Eggs: Place the eggs in a pot, cover them with water, and bring to a boil. Once boiling, cover and remove from heat. Let sit for 12 minutes.
Cool and Peel: After 12 minutes, place the eggs in ice water for 5 minutes. Once cool, carefully peel the shells and slice each egg in half lengthwise.
Prepare the Filling: In a bowl, scoop out the yellow yolks and place them in another mixing bowl. Mash the yolks with a fork until smooth.
Make Guacamole Filling: Add the ripe avocado to the yolks and mash until creamy. Stir in the lime juice, cilantro, jalapeño, red onion, and diced tomato. Season with salt and pepper to taste.
Fill the Egg Whites: Spoon or pipe the guacamole mixture back into the egg white halves. Use a piping bag with a star tip for a decorative finish, if desired.
Garnish: Top each filled egg with your choice of optional toppings, such as crumbled feta cheese, sliced olives, or a sprinkle of extra cilantro.
Chill and Serve: Refrigerate the deviled eggs for at least 30 minutes before serving to allow the flavors to meld together.
