Instructions
Cook the cheese tortellini according to package instructions in a large pot of salted boiling water. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute, until fragrant.
Add the halved cherry tomatoes to the skillet and cook for about 3-4 minutes until they start to soften.
Stir in the chopped spinach and let it cook until wilted, around 2 minutes.
Pour in the heavy cream, Italian seasoning, and red pepper flakes (if using). Stir well to combine and let it simmer for about 2-3 minutes.
Once the sauce is bubbling, add the cooked tortellini and half of the grated Parmesan cheese. Toss gently to coat the tortellini in the creamy sauce.
Season with salt and pepper to taste, and let it cook for another minute.
Serve hot, garnished with the remaining Parmesan cheese and fresh basil leaves.
Notes
Feel free to adjust the spice level by adding more or less red pepper flakes.
