Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the creamy peanut butter and granulated sugar until well blended.
Add the egg and vanilla extract to the mixture, stirring until smooth and fully combined.
In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this flour mixture to the peanut butter mixture, stirring until just combined.
Using your hands, scoop about 1 tablespoon of dough and roll it into a ball. Then, roll the ball in granulated sugar until fully coated.
Place the balls on the prepared baking sheet, spacing them about 2 inches apart.
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
Remove the cookies from the oven and immediately press a chocolate kiss into the center of each cookie.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
