Instructions
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine the sliced peaches, brown sugar, and cinnamon. Toss until the peaches are well-coated. Spread this mixture evenly in the bottom of a greased 9x13 inch baking dish.
In a separate bowl, combine the yellow cake mix with water and vanilla extract. Stir until just blended (don’t worry if there are a few lumps).
Pour the cake batter evenly over the peach mixture in the baking dish, ensuring it completely covers the peaches.
Drizzle the melted butter over the top of the cake batter. If desired, sprinkle chopped pecans for added texture and flavor.
Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the fruit is bubbling.
Remove from the oven and allow it to cool slightly before serving.
Notes
Serve warm with vanilla ice cream for a delicious contrast.
