Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a skillet, heat olive oil over medium heat. Add the sliced ribeye steak, bell peppers, and onion. Sauté until the meat is browned and the veggies are softened (about 5-7 minutes). Season with salt, pepper, and garlic powder. Remove from heat and let cool slightly.
On a floured surface, roll out the pizza dough into a rectangle, about 1/4 inch thick.
Spread the cream cheese evenly over the dough, leaving a small border around the edges.
Evenly distribute the sautéed steak and vegetable mixture over the cream cheese layer.
Sprinkle the shredded provolone cheese on top of the filling.
Starting from one edge, carefully roll the dough to create a log. Seal the edges by pinching them together.
Cut the rolled dough into 1-inch wide strips and place them on the prepared baking sheet, cut side up.
Bake in the preheated oven for 15-20 minutes or until golden brown and the cheese is melted.
Allow them to cool slightly, then garnish with fresh parsley before serving.
Notes
Feel free to substitute ribeye steak with grilled chicken for a variation.
