Add the ground chicken to the skillet, breaking it apart with a spatula. Cook for 5-7 minutes until the chicken is no longer pink.
Stir in the Gochujang, soy sauce, honey, and rice vinegar, mixing well to combine. Let the mixture simmer for about 3-4 minutes until it's well-coated and heated through.
Remove the skillet from heat, then mix in the shredded carrots, diced bell pepper, and chopped green onions. Allow to cool slightly.
To assemble, take a lettuce leaf and spoon a generous amount of the spicy chicken mixture into the center.
Sprinkle sesame seeds on top for added texture and garnish.
Serve immediately, allowing each guest to roll their own lettuce cup.
