Instructions
In a medium bowl, combine the peanut butter, soy sauce, lime juice, chili paste, honey, and sesame oil. Mix well until smooth and creamy. This will be your spicy peanut sauce.
In a skillet over medium heat, add a drizzle of sesame oil and then the sliced chicken. Season with salt and pepper. Cook until the chicken is golden brown and cooked through, about 5-7 minutes.
Once cooked, remove the skillet from heat and pour half of the spicy peanut sauce over the chicken, tossing to coat. Reserve the remaining sauce for drizzling later.
On each tortilla or lettuce leaf, layer shredded carrots, red cabbage, and cucumber. Add a portion of the spicy peanut chicken on top.
Drizzle a little of the reserved spicy peanut sauce over the chicken.
Carefully fold the wraps, starting from one edge, tucking in the sides and rolling tightly.
Slice each wrap in half diagonally for easy eating.
Garnish with fresh cilantro and chopped peanuts before serving.
